The Anzac biscuit, famous in Australia and New Zealand, is commonly made using rolled oats, flour, sugar, butter, golden syrup, baking soda, boiling water, and desiccated coconut. Anzac biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War I. It is claimed that the biscuits were sent to soldiers by wives and mothers during World War I as the ingredients lasted well over long journeys.

Our recipe is a common favourite sourced from the golden syrup tin located in the Blundells Cottage collection. It includes coconut which was a later recipe addition after the war years.
